Breakfast Anytime Casserole


I sure had a jam packed socializing weekend. This was one of those weeks that I really wish I had one of my short weeks. Unfortunately, I do not.

After my minor surgery and getting a small infection due to the procedure, the meeting of my new uh...(soon to be) step mother, cocktails with my uncles, night caps with a couple friend(s), touristing in my own town with my old roommate, and hosting a dinner party-I am tired. I'm looking forward to my two weeks off at the end of the month.

Some people ask for pictures of their new baby. I ask for pictures of the inside of my body. Might as well get a picture if they're sticking cameras inside me (art project)

I wasn't sure what to make for my dinner party and opted for a breakfast casserole. Quick easy and oddly enough I got a huge bag of tater tots from work and needed to utilize them this week anyway. Since, I had the week off from private client work, I have very little in my fridge. This is a really adaptable recipe and you can use whatever you have in the fridge/freezer.

Serves: Two Beautiful Single Ladies

Ingredients:

4 Slices of day-old bread, cubed

6 Eggs

2 Cups Half & Half

1/2 tsp. Onion Powder

1/2 tsp. garlic powder

1/4 tsp. mustard powder

Pinch Red Pepper Flakes

1 tsp. Dried Basil

1/4 tsp. Oregano

1 Cup shredded Gruyere Cheese

1/4 Cup Pimentos

1/3 Cup Shredded Smoked Gouda

Olive Oil

S & P

Tater Tots

Sour Cream

Green Onion

Preheat oven to 375. Scramble Eggs, with all the dried herbs and Half & Half. Spray bottom on the casserole dish with PAM. Place the cubed bread pieces in the bottom of the casserole dish and pour egg mix over the bread. Sprinkle with the cheeses. Add pimentos. Top with the tater tots and pour a little olive oil over the tots. Bake 45-60 mins or until firm. Let sit about 10 minutes before cutting. Slice and serve with a dollop of sour cream and green onion. I had this bottle of mimosa in the fridge that was perfect.
