Leftover Pizza Breakfast Casserole

It's been 24 days since I bought

my domain name (hooray!), and have not posted anything since (boo!). I have been experimenting with a few new recipes and some just didn't turn out too great and can't bring myself to just post to post. Dum.

Seriously. I know I suck and also have been super busy with my new boy. Or should I say, new-old boy? Reconnected after 13 years. Kinda crazy, but it is what it is. Perfect timing for both of us. Weird how things work out sometimes.

Onto my casserole. I feel bad that my last post was a breakfast casserole too, but I'm hoping you will forgive me. Just indulge in all that casserole goodness and the disappointment will just melt away.

So, this casserole works with any type of leftover pizza. And honestly, the weirder the pizza, the more interesting and complex of the flavors of the casserole will emerge. I happened to have half of a plain cheese pizza left over from school, so I added extra veggies to spice it up. Feel free to add whatever pizza ingredients you have on hand.

Serves:

2 Reunited Lovers

Ingredients:

4 TBS Butter

1/3 Cup Chopped Onion

Lg Clove Minced Garlic

1/3 Chopped Green Pepper

S&P

1 Cup Shredded Gruyere Cheese (or any cheese will do)

1/4 Cup Parmesan Reggiano

Roughly 2 Cups Chopped Pizza

6 Eggs

1/2 Cup Half & Half

1 TBS Dried Oregano

1 TBS Dried Basil

2 Pinches of Red Pepper Flakes

1 Cup Marinara

Preheat oven to 350. Spray a small casserole dish with olive oil. Layer Chopped pizza on the bottom of the dish. In a Med pan-melt butter on Med-Low, add garlic and saute till fragrant. Turn heat up to Med and then add the onion and green pepper. Saute till onion is translucent. Add S & P.

While peppers and onion are cooking-wisk eggs and half & half in a dish. Add herbs (oregano, basil, red pepper flakes and S&P).

Pour cooked green pepper and onion over the chopped pizza in the casserole dish, and add the Egg/Milk to dish.

Top with cheeses and bake 30-40 minutes or until the casserole is firm in the middle. Let stand approximately 10 minutes before cutting.

Heat marinara in a small sauce pan. Divide onto two plates and top with a slice of the casserole.

I served my mine with freshly squeezed Blood Orange Juice.
