Nutella, Banana, Peanut Butter Quesadilla with Hemp & Chia Seeds
I have a bunch of bananas that are starting to get all speckled. I hate speckled bananas. I'm one of those weirdos that likes slightly green bananas. I mean, you can't get more "fresh" than green. Right!? Although, I was tempted to whip up boring old banana bread (which, I will likely do anyway since I still have a lot left) or banana pancakes, I thought to do something a little different. I have a Costco size of Nutella that I really need to start using up as well. And that would have been fine alone, but hell! I need more protein in my diet. So, organic peanut butter, hemp seeds and chia seeds were also added. Noms! Now, I'm not gonna lie, this was pretty sweet. It's a nice little breakfast treat or a delicious little snackie. Yea, I said snackie.
Servings: 1-2
Time: About 15 minutes
Ingredients:
2 Flour Tortillas
1/4 Cup (about) Nutella
1/4 Cup (about) Organic Peanut Butter
1 Banana
1/2 TBS Hemp Seeds
1/2 TBS Chia Seeds
1 TBS Cinnamon Honey Butter (regular will do)
Optional-Sprinkle of Powdered Sugar
Take one tortilla and spread a thin layer of Nutella all over. I left about a 1/2 inch of the sides Nutella free, since I knew this would likely be creamy and melty and melt outward. I sliced a banana and placed a sigle layer of banana slices all over Nutella.
Melt butter in large frying pan over Medium Low heat. Once melted place the Nutella and banana filled tortilla very gently into pan.
Then take the second tortilla and smooth peanut butter on in the same fashion. Sprinkle hemp and chia seeds on top of the peanut butter and place on-top of the other tortilla already in the pan. Cook about 6 minutes (or until golden brown). Flip and cook for an additional 4 minutes or until golden.
Gently remove and place on cutting board. Let sit about 5 minutes to let it firm up a bit. Using a bread knife, slowly cut through, into triangles. Top with powdered sugar and serve!
