Fiesta Black Bean Soup


So, it's been one full month. No liquor, or beer, or wine (with alcohol). Actually, it wasn't all that tough. However, I have realized how much alcohol does take the edge off my social anxiety and stress. But, now I know I don't NEED it. Not that I thought I did, but it's nice to test yourself every once in awhile.

But what I did need, was something to warm my soul. I feel Spring coming, but she's still dragging her feet. I like to treat myself to something fun at the grocery store every once in awhile to keep my head up in these difficult Midwest winters. I found this interesting seasoning at Aldi's called, Tajin. Ever hear of it? I think its happiness in powder form. That totally sounds like a drug. But, really, this stuff is totally addicting. It's a mix of Mexican chili powder, powdered lime, and salt. Fan-fucking-tastic. Sprinkle it on anything!

This soup would be great to serve alongside a delicious, salty margarita rimmed with Tajin (of course). I'm totally having one tomorrow. I earned it. Enough about cocktails (for now), go make this soup!

Servings: 2-3

Time: About 30 minutes Ingredients: 2 TBS Olive Oil 1/4 Cup Chopped Red Onion 2 Garlic Cloves, pressed 1/2 Cup Frozen Organic Corn 1/2 Cup Organic Black Beans from a can (drained and WELL rinsed) 1 Cup Jarred Marinara 1 Cup Organic Vegetable Broth 1/4 Cup Sliced Black Olives 1 TBS Powdered Garlic Pinch of Red Chili Flakes Tajin (not optional) Salt & Pepper to taste Optional (not really you need these)- Additional sliced Black Olives for garnish Fresh Cilantro-chopped Avocado-sliced Organic Corn Tortilla chips-crushed Squeeze of fresh lime juice Sour Cream (or Vegan Sour Cream)

Crank heat to Low-Med. Add olive oil, onion and fresh garlic. Stir frequently, making sure not to burn the garlic. Once aromatic (I like that word. Seriously, just say it a few times. Makes me happy.) Once aromatic :) Add corn till defrosted, add black beans and marinara. Stir really well. Once mixed well. Add the broth, powdered garlic (I like garlic), and chili flakes, a little salt, and pepper. Crank heat to Med. Once boiling add black olives. Turn off heat and stir well. Spoon into bowls. Top with crushed tortilla chips, cilantro, avocado, sour cream, squeeze of lime and a few dashes of Tajin. Make a margarita. Enjoy!
