Creamy Crabby Artichoke Ricotta Dip
It's kinda crazy when you think your life is going one way, and POOF! It gets turned upside down and all your perspectives totally change. It feels good to be really happy about something you didn't think you'd ever have, or really needed. Life is funny that way.
In celebration of my no longer crabby disposition about love, I give you....THIS dip.
It's pretty fucking fantastic and easy as hell to whip together. I ate it all week, but shit...it would be great at a party. Just saying.
I enjoyed it with a dribble of hot sauce and gluten free crackers. I LOOOOVE these crackers from Aldis's. The only issue I have is that the bag is so small. I have no problem polishing off one tiny bag in a sitting. It's gluten free, so that's okay. Right???

Party of Two
Ingredients:
8oz Block of Cream Cheese-softened
1 TBS Garlic Powder
1/2 TBS Onion Powder
1 TBS Red Pepper Flakes
1 TBS Mustard Powder
Hefty Pinch of Salt and Pepper
1/2 Cup Ricotta Cheese
1/3 Cup Mayo
1 Cup Shredded White Cheddar
1/2 Cup Parmesan Cheese + another 1/4 Cup for topping
1/2 Cup Chopped Marinated Artichokes from a can or jar (drained)
1 6 oz can of DRAINED Crab Meat
1 TBS Worcestershire
1/4 Cup Panko Bread Crumbs
Sprinkle of Olive Oil
Crackers (duh.)
OPTIONALS:
Green Onion
Hot Sauce
Soften cream cheese.
Preheat oven to 325.
Spray a 1 1/2 Qt pan with Olive Oil or Pam.
In a stand mixer, mix in all the herbs-Garlic, Onion, Red Pepper, Mustard, S& P. Add in Ricotta, Mayo and mix till JUST combined. Add the Cheddar and Parm cheese by hand. Fold in the drained artichokes and crab meat.
Top with bread crumbs, the rest of the Parm cheese and a dribble of Olive Oil.
Bake at 325 for about 20 mins., or until hot and bubbly.

Look at the pretty birthday cake I made my mom & her husband last week. Oddly, they have the same birth date. Crazy right? What's even crazier, is that her parents also had the same birthday. Just really weird. It's a Pistachio Cake with a homemade pistachio paste and chocolate ganache. NOMS! Look at it! Just look at all that pistachio good-ness! :)
