Homemade Granola Banana Energy Roll- to roll with the punches of life


I am starting to come down from my cloud in the sky and it is a bit of a rude awakening. However, I am grateful for the start of an early, very Hot summer. Nothing is more comforting than that beautiful sun in the sky. :::raises arms to the heavens:::

With that, I am making extra time to start blogging on a weekly basis again. And that is surely a great thing! With the heat, has come the limited shelf life of my fruits and veggies. I have come up with some new ways of using up my bunches of bananas that seem to last only about 4 days now #sadface

I have made this snack numerous times before , but with a processed granola. I thought it a great idea to use it with my new homemade granola that I have been experimenting with this last year.

It is imperative that you use a flour tortilla. I know, I know...flour!? But come on kids! Live a little!!!

Servings: One Unicorn Ingredients: Granola-

This granola recipe is adapted from Cookie and Kate-http://cookieandkate.com/2015/healthy-granola-recipe

4 Cups of Rolled Oats

1 Cup Raw Pumpkin Seeds

1 Cup Pecans 1/4 tsp Cinnamon

1/4 tsp Salt

1/4 Cup Olive Oil

1/3 Cup Melted Coconut Oil

1/4 Cup Maple Syrup (the REAL stuff)

1/4 Cup Honey

1/2 TBS Vanilla Extract 1 Cup Dried Cranberries

1 Cup Dried Banana Chips

1/4 Cup Raw Hemp Seeds

1 Flour Tortilla (Burrito Size)

1/4 Cup Organic Peanut Butter

1 Banana that is smooshy (or not smooshy)

Preheat Oven to 350. Mix all granola ingredients EXCEPT the cranberries, banana chips and the hemp seeds. Making sure everything is nicely coated. I like to leave out the fruit since I feel like it dries out in the oven and don't want to cook the hemp seeds and loose the nutrition. However, if you want to bake ALL of it together-do what you want, seems like everyone is on that kick this week.

Line a baking sheet with parchment. It really helps with the clean up! Spread the gooey granola mix onto the sheet. Push down to get a nice, even layer. Bake for about 25-30 mins. I like to stir the mix every 10 minutes and check to make sure it's not burning. Every oven cooks differently.

Take out of oven and let cool completely. Once it hardens and is cooled, you can break it up.

Take a flour tortilla and spread peanut butter all over the middle, leaving a 1/4 inch diameter around the outside. Sprinkle with homemade granola and place banana on the side and gently roll. Cut in half!
