Feta Lover Radish Dip

Holy Crap! It's August. How the heck did that happen? Summer half way over!? NOOOOOOOO! It's been a whirlwind of summer love affairs, gardening (weeding), pretending I didn't JUST turn 34 and booking myself as many gigs as possible. That doesn't sound like that much fun, re-reading it, but I feel good! I think I already had a successful summer, but would still like to hit up more farmer's markets and go to an outdoor movie theater. Do those still even exist? I also, wanted to try my turn at camping. Yea. Outside, on the ground. Better get myself situated before the end of the world comes anyway (aka The Presidential Election 2016).

So, to ease the pain before the end of the free world, as we know it. Let's eat a bunch of feta. Doesn't sound too bad for a last meal actually...

Serves: 2-3 Apocalypse Survivors

Ingredients:

Block of Feta+ some of the brine (don't toss it!!!)

2-3 TBS Olive Oil

1/2 TBS Garlic Powder (cut it back a little, if you don't like garlic)

2 Large Radishes-thinly sliced and cut into quarters

Crackers to Serve

"Special" Kitchen Equipment:

Food Processor

Easy-peasy ingredient list, right?

So, crumble feta and add it to the food processor. Pulse. Add a TBS of feta water brine, Pulse again. Pulse it baby, pulse it good. Okay, now add the Olive Oil and Garlic Powder, You guessed it, Pulse again. I like to test the wateriness at this point. Is it too thick still (to dip a chip in)? If so, taste and see if it needs more salt. If so, add a LITTLE more brine. If the saltiness is good, add more Olive Oil instead. Once the consistency and taste is good, pour into bowl. Add the chopped radishes. Mine were from my mom's garden. I love the fresh produce coming in right now. It makes me feel all healthy and fancy and stuff.

Serve with crackers! I'm on a gluten free kick again, so those rice crackers are the shit.
