Carrot Veggie Burgers (GF)
One more day until the TOTAL SOLAR ECLIPSE. In the United States, we haven't had one since February 26th, 1979. So, before I was born...and this is kind of exciting.
Not surprisingly, I didn't get those fancy glasses. So, I will be outside with a little paper plate trying to watch this thing by reversed shadow. I'm tempted to revert back to our ancestors and act like this is doomsday, and a sign from the sun gods that we are getting punished for something. Instead, I may pop a bottle of champagne just in case I need to sit back with Kitten and watch the whole world burn.

One last day of total freedom. I've had a pretty busy summer. I surprisingly was a lot busier than I thought I'd be. But with random gigs, volunteering at my local art museum and throwing several parties I have been kinda swamped the last 3 months.
Unfortunately, I have neglected the garden and so did my mother. It is a royal mess these days and I don't know what will come out of there, if anything. She did manage to keep the cucamelon plant going and was able to throw a little photo shoot for them.
Besides all that...where did it all go? It was pretty relaxing though.
Still I have been debating on the "do I stay, or do I go?" Still weighing my options. I came back to my small quiet town for a reason. I shouldn't let some heartbreaking sexy hustler ruin that all for me. Should I? I don't know. What I do know is that more time will tell. And I'm just going to take each day slowly. One thing, I have learned is that I not only did I fall for someone Once this year, but Twice and who knows what could happen a third time. Right? Life seems to bring us lots of surprises. The weird "coincidences" I've been encountering the last few weeks is a bit odd, but am attempting not to look too much into it right now. And attempt to keep from reacting to them and reaching out too quickly. Because, most people are incapable of understanding where I'm coming from and why.
So, going through my drawer of scratched recipes on random bits of paper, I came across one that I made us this summer and just didn't have a chance to write up.
This Veggie Burger.
I have been eating a lot of candy lately, which is kinda weird for me. I love candy, but I've been needing a daily candy fix. Daily! That's not normal for me. Granted, I do keep mostly natural candy on hand...sugar should be getting consumed only in moderation and I'm blowing through it. Ah!
So, lets replace all that candy with these Veggie Burgers. I had made the buns from scratch too, but I can't find the recipe to source, so it will have to be omitted as of now. They're pretty amazing though, don't you think!? I do.
Serves:
4 Sugar High Candy Gobblers
Ingredients:
1/2 Cup uncooked (then cooked) Quinoa
2 Carrots Shredded (about 1 cup)
1 Cup Crumbled Feta Cheese
3 TBS Red onion-Chopped
6 Fresh Basil Leaves-Cut
1 TBS Granulated Garlic
3 TBS Tahini
1/4 Cup Hemp Seeds
1/3 Cup GF Brown Rice Bread Crumbs
1 Egg Beaten
Add onto burgers later:
4 Hamburger Buns
Cheese Slices
Ranch
Sliced Tomato
Add all burger ingredients in a large bowl. Mix well.
Divide into 4 balls and press gently into little patties.
Not too thick, not too thin. Just right. Just normal patty size.

Heat a fry pan on Med Heat with a little avocado oil and crisp up for a few minutes on each side, till golden. Finish burgers either on the grill or in a 375 oven for about 15-20 minutes.
Top with a slice of tomato, Cheddar cheese and a drizzle of ranch. Make sure you enjoy with a giant beer. Or a gluten free cider ; )
