Vegan Peaches & "Cream" Homemade Oatmeal
It's a Friday night and I was debating being a cool kid and going to my most favorite dance club. But as soon as the clouds came rolling in, I lost ALL motivation. So, currently I'm soaking in a hot bath, sipping on a rose soda and chopping on Oreos. Pretty amazing night, actually.
Don't judge me.
I'm pretty confident, I'll be in bed by 10. Correction, 9pm. I have hosted several nights this past week and was over served last night. Good time to catch up on some R&R!
But I have been craving Oreos like a fat kid in a candy store. Which, is totally bizarre since I have never-ever bought a package myself. Eaten them? Most obviously. But purchased them myself? Nope. Just a really weird couple weeks with cravings and everything. And they're vegan. What!!? I'm mulling over an Oreo recipe. To be continued...
But I have totally been on a vegan kick. I feel like I need to apologize to you all, for some reason 🙄
I'm not getting rid of all dairy, but it's probably a wise idea to cut it a little out of my diet. Next move is sugar, because that really is the ultimate sin. Such a terrible ingredient, but motherfucker is effing tasty. Plus, candy. I LOVE candy. It's my top 7 favorites. And what's in candy? SUGAR! Lots and lots of sugar! Ugh.
But this little baby doesn't have any processed sugar. I will admit I was heavy handed on the additional "drizzle" of maple syrup. Because the good stuff, sure as hell tastes just as delicious as candy.
Anyway. Back to my vegan kick. So, I whipped up this oatmeal a couple weeks ago and was terribly impressed with it. Keep in mind I was on my weird non-diet (diet) and dirt may have been just as tasty as anything I put in my mouth. But! Seriously, this is good. Plus, waaaay healthier than that instant Peaches & Cream oatmeal we all used to eat in the 90s. Tell me I wasn't alone! I really enjoyed the Strawberries & Cream and the Peaches & Cream. Probably because it was loaded with sugar! Noms. So, check it out. Let me know what you think.
Servings: Two Friday Homebodies
Ingredients:
1 1/2, plus 1/8 Cup water
Pinch of salt
1 Cup Old Fasioned Oatmeal
8 oz. Almond Milk
1/2 tsp. Cinnamon
1/16 tsp. Nutmeg
Another pinch of Salt
3-4 (about 12 oz.) Peaches-chopped, plus another 1/2 Cup chopped (for topping)
1/4 Cup Real Maple Syrup, plus more for serving
1/4 Cup Chopped Walnuts (I didn't toast mine, but you totally could)
Boil water and pinch of salt. Stir in Oatmeal. Simmer uncovered for about 2 minutes. Stirring and watching carefully. Add almond milk, cinnamon, nutmeg, and another pinch of salt. Add 12 oz of the chopped Peaches and maple syrup. Cook 3-4 additional minutes. Once most of liquid is absorbed (not all), take off heat and plate. Top with additional chopped Peaches and Walnuts. Drizzle with more maple syrup and enjoy!
