Buffalo Cauliflower Pizza w/Ranch Gorgonzola Drizzle


I just realized it's Sweetest Day today. Ugh! Makes me barf. Just why? I'm torn between wondering if it's all due to businesses making some extra cash or couples just trying to torture us singletons. Maybe it's a combination of both. Regardless, it's irritating. Like, am I supposed to feel all special if my boy toy buys me a diamond necklace on this day, or some candy? Dumb. I'm just happy if he remembers to bring me my favorite coffee or some filtered water. Priorities, obviously.

As we approach the Witches' New Year (aka Halloween), I like to regress and look back on not only last year's spiritual growth and life lessons, but years beyond. What have I endured and how has it changed me? What do I need to continue to work on? How can I grow as a human and as a spiritual being and what can I do in this lifetime to make a difference? Obviously, not all of these will come with a defiant reason or answer. But this deep contemplation has been my number one thing that's been on my mind.

Someone asked me a few months ago, "what do you want?" And it startled me to realize, I don't know. What I do know, is, what I Don't want. I have seen and gone through enough to realize what I don't want to ever repeat. Whether it was my own personal lesson, or someone else's that I was a witness to. So, I have decided to make a very public list of what I Don't want and mostly Don't want in personal relationships.

1. People who have spawn that don't take care of them emotionally or financially

2. People who are going to scold me on how to sit on their $5k couch

3. People who are going to scold me as a child about anything, really. I'm 35

4. Workaholics. Take a fucking Saturday off, you deserve it. Life's too short!

5. People who are incapable of analyzing & critiquing themselves and making positive changes

6. People who I'm dating who refuse to fix my car when that's their profession because they're too lazy and/or afraid I'm using them for such talents. I don't have time for that.

7. People who come to my house for entire weekend stays and literally bring nothing. I'm not your personal chef or maid

8. Anyone who will fit into any of the new crazy dating classifications; ghosting, slow fade, bread-crumbing, haunting, or any other ridiculous dating term, when they really all mean the same thing. The person, is a total asshole.

So, with further consideration. I do know what I want. I want to be with people who aren't assholes. Easy enough, right? Shockingly, there are a lot of assholes out there.

I threw a mini dinner party this week for some friends, that I hadn't had over for awhile. Week nights are tough, and each time I throw a party during the week, I wish I would have suggested the weekend. I work two relatively physical jobs and by the time I get home, I really don't want to make a huge meal and host it. But, I do like hosting and that's why I do it time and time again. However, I seem to have learned a little and make the meals more and more simply to make it as easy as possible on myself. So, I made these Buffalo Cauliflower Flat Bread Pizzas. And that Ranch Gorgonzola drizzle...drink worthy!

Serves: 4 Weekday Dinner Guests

Ingredients:

Head of Cauliflower-chopped into bite sized pieces

16 oz Almost entire Bottle of Pre-made Buffalo Sauce (I used Sweet Baby Rays)

1/3 Cup Organic Vegetable Broth

1 TBS Granulated Garlic Powder

1 TBS Granulated Onion Powder

4 Flat Bread Pieces

2 TBS Avocado Oil, and another 1 TBS for painting the pizza bread

1/2 Red Onion Sliced thinly

2 Cups Mozzarella Cheese

1/4 Cup Chopped Celery

2 Cloves FRESH Garlic-minced

Fresh Veggies to serve with (carrots, cucumber, celery sticks)

1/2 Cup Crumbled Gorgonzola (half of it will be used for Ranch Sauce)

Ranch Gorgonzola Drizzle

1/4 Cup Crumbled Gorgonzola

10 oz. Sour Cream

1/4 Cup Mayo

2 TBS Penzey's Ranch Mix

A couple TBS of Almond Milk

Make Ranch Gorgonzola Drizzle first. You'll want to make it at least 3 hours beforehand (if not overnight). Let sit.

Preheat oven to 350. Coat chopped cauliflower pieces in avocado oil and sprinkle with the onion and dried garlic and place in a glass baking dish. In a medium bowl, whisk buffalo sauce, vegetable broth and pour over the cauliflower. Roast about 30 minutes. Toss and re-coat and bake another 20 minutes. Toss again and see if it's just starting to roast. It will continue to cook once you place on the pizzas, so don't overcook.

Paint the flat breads with a little avocado oil and fresh garlic. Place sliced red onion on painted bread. Sprinkle with mozzarella cheese. Add the buffalo cauliflower and then sprinkle with gorgonzola. Bake pizzas at 350 for 20 minutes. Turn and rotate pizzas and cook an additional 10 minutes. Remove from oven and top with chopped fresh celery. Drizzle with Ranch Gorgonzola Drizzle and Enjoy!
