Vegan Spicy BBQ Pulled “Pork” Jackfruit Sandwiches & V-Day Rant

February. The month of loooove! Oh Yeay. Seriously, I think it’s fabulous how so many people are able to dedicate one day out of the year to remind each other how much we care with; boxes of chocolates, diamonds, flowers and sexy lingerie. But, really? Why aren’t these every day things. Not that I’d want flowers EVERY day, but. No, really. Every day. Totally joking! But why are we pigeonholed into putting so much emphasis on one another’s love on specific days. 

If your sweetie isn’t treating you special every day, why stick around for them at all? I just don’t quite comprehend it. It sometimes feels like, most people. Or at the least, a lot of people put all of these rules and expectations on not only their significant others, but also on themselves. And they are made from a lot of boloney from the masses. Thus, turning these beautiful, unique experiences into selfish, self centered public displays of attention that mimic what everyone is programmed to think is a healthy relationship. It’s totally twisted. 

Now, don’t get me wrong. Being in love is fucking wonderful. It’s what I imagine flying to feel like. Possibly off a building...

But real love. The love where you would literally do anything for that person. And looking into their eyes is like being Home. Our ultimate home. It feels safe, comfortable and your heart breaks whenever they’re even in an ounce of pain. No matter what they say or do. You love them unconditionally. Really UNCONDITIONALLY. No matter what type of box of chocolate they get you. That’s real love.

It’s totally silly.

So, I’m hoping everyone Maybe is reminded what this day is actually really about...getting drunk, whipping women with animal hides and fucking around with some guy who fished your name out of a bowl. Seriously...look it up. 

Let’s keep the real love separate to every other day and enjoy these Pulled “Pork” Sammies. They will likely get your little heart going.

Serves: 2 couples in Love

Ingredients:

1 can drained, chopped Jackfruit 

3 TBS EVOO

1 Small Onion-chopped

2 cloves Garlic-minced

1/3 cup Tomato Paste

7 oz can Chipotle Peppers-chopped 

(If less spicy, reserve peppers and just use liquid. Or half the peppers)

10 oz Vegetable Broth

3 TBS Liquid Aminos 

3 TBS Liquid Smoke

4 TBS Brown Sugar

4 TBS White Vinegar 

S&P

4 Kaiser Rolls

Shredded Cabbage 

Pickle Slices

Vegan Mayo

Heat a large skillet pan over Med Heat. Add EVOO. Sauté chopped onion till translucent, add garlic. Stir one minute till fragrant. Add chopped Jackfruit. Sauté about 10-12 minutes. Add tomato paste, Chipotle peppers, 6 Oz of veggie broth, Liquid Aminos, Liquid smoke, brown sugar, vinegar and salt and pepper. Bring to a soft boil (over Med), cover and then turn down to low. Simmer about 45mintes-an hour. Check every 15 minutes to stir and add more broth to break down the Jackfruit. Once the Jackfruit is nice and tender, take two forks and pull the Jackfruit apart by shredding it.

Toast buns, slather with mayo, and sprinkle with S & P. Top with cabbage, a generous topping of bbq “Pork” and sliced pickles. Best enjoyed with a side of potato chips and some of that unconditional love from your Valentine’s Day babelet.
